PROXY : fix from patch "Make sure utf8string is NUL ..."

The FSAL_PROXY was broken since the commit f1a4e1c4d00
"Make sure utf8string is NUL terminated everywhere".

This patch only undoes FSAL_PROXY modifications of this patch.
